Rosemary & Thyme Grilled Chicken

A quick and simple recipe, chicken breast marinated in herbs, garlic and lemon; grilled to perfection. 
Perfect for a night in and best served with mashed potatoes and delicious mushroom sauce.

Ingredients:
  • Chicken Breast
  • Thyme
  • Rosemary
  • Finely chopped Garlic
  • Chilli Flakes
  • Lemon juice 
  • Salt
  • Pepper

Prepping the Chicken: 

Put the chicken breasts in a zip lock bag and using a rolling pin or meat mallet beat the chicken pieces to a even thickness. This will help the chicken cook evenly throughout. Score (making shallow cuts) the chicken once they're of the same thickness.

*Note - If you don't have a zip lock bag; you can cover a chopping board with cling wrap, place the chicken pieces over it and then cover them with the cling wrap and beat using meat mallet or a rolling pin.





Marinade:

In a bowl mix thyme, rosemary, chopped garlic, chilli flakes, lemon juice, salt and pepper. Massage this mixture over the chicken pieces making sure they're coated throughly. Set aside the marinated chicken pieces for at least half an hour. You can even marinade the chicken and keep in the refrigerator overnight. 

Cooking:

Put a grill pan on high heat, once hot add butter and grill the chicken for a 1 minute on each side or until fully cooked. 

**Note - To check if the chicken is cooked properly pierce a knife through the thickest part of the piece, if it glides though it's cooked. Another way to check if the chicken is cooked throughly is, when you cut the through the thickest part the chicken should be fully white on the inside. If it is still pink it is not cooked properly. 

Serve hot with a side of mashed potatoes, some veggies of your liking and some sauce drizzled over the chicken.
